Ingredients
2 1/2 cups rolled oats (GLUTEN FREE if needed)
2 cups diced apples
4 eggs
2 cups milk (can use almond or coconut milk if lactose free)
1 1/2 tsp. baking powder
3/4 tsp. salt
2 tsp. vanilla extract
1/3 cup light brown sugar
2 tsp. ground cinnamon
1/2 tsp. nutmeg
1/4-1/2 cup raisins or mixed dry berries
Directions:
-Preheat oven to 325 degrees F. Grease an 9-by-9-inch baking dish and set aside. I used coconut oil to grease the pan.
-In a large bowl, mix together oats and all the dry ingredients. Then stir in apples and raisins.
– Next add the wet ingredients (eggs, milk, etc.) and gently stir to combine.
-Pour everything into greased dish and bake for about 1 hour, until golden brown.
-Serve warm or cold and enjoy!

Looks good! Surprised that there was no type of oil or at least applesauce ?
Made this twice, it was so good! Kept well in the fridge so had it for breakfast a few times.
No need for oil other than what was used to grease the pan.
