I'm looking for ideas. What kinds of things do you cook in your crock pot? Are there any particular sites you use for ideas or recipes?
 
Oatmeal!!!

You can put one cup of steel cut oats, 1-2 sliced apples, 5 cups of water, in the crock pot right before you go to bed, and wake up to the creamiest oatmeal ever!
Cook it overnight on the lowest setting:)
 
yummy-I'm a crockpot fanatic and have NEVER made oatmeal in it...yet!!! I have tons of apples to use up...as far as what do I cook or where do I look, Fix it and Forget it has tons of recipes (crockpot cookbook) and also has a light version. This time of year it gets a lot of use as I feed 4-6 guys in the field many nights of harvest...I make lots of roasts with taters and carrots, chicken and rice, spaghetti, calico beans, even dessert!!! I also google recipes!!!

Kickin' Creamy Chicken stew

This was soooo good...

5 frozen chicken breast
1 16 oz jar of salsa verde
2 cans black beans
1 can sweet kernel corn
1 can diced tomatoes
1 tsp cumin
1 3 oz reduced fat cream cheese

Place frozen chicken in bottom of crockpot.Then add remaining ingredients.
Cook on high for 4 to 5 hrs. At this point remove half the liquid. You can leave all the liquid if you want. Add the cream cheese and leave on warm for 30 minutes. then stir.
Serve over rice or in tortillas or by itself.

I tweeked this a bit. If you want to freeze portions do not add the cream cheese to the entire mix. I added by the Table spoon to each individual serving. I also did not have regular corn so I had to use cream corn and it turned out great. Instead of cooking on high for 4 to 5 hrs I knew I would be gone all day so I just cooked it on low all day and it was very thick and delicious when we got home from work. Not to mention the house smelled great so this is great for a winter time dinner:)

I just bought some center cut pork steaks - am planning on doing a chili verde style crock pot meal. Just add the pork, sauteed onion, garlic, then add diced jalepeno with half green chile and half either salsa or red enchilada sauce.

Cook all day and then shred the meat before eating. We wrap in tortillas. DH heats tortilla with cheese and I like to add sour cream and avocado. You can garnish as you like, and sometimes I will add black beans to the mixture before serving.

DH and I were just discussing the other day that we want to use the crock pot more...thanks for all of the yummy ideas everyone!

(And now that I've posted here, it's in my subscriptions so I'll be able to find this thread again!;))
 
For Gayle and anyone else interested in the Pulled Pork recipe I posted, you can simplify the recipe even further by using 1 C of ketchup and 1 C of your favorite BBQ sauce. You don't even have to bother with the rest unless you want to. :)

And for the Italian Beef recipe, I use 3 Cups of beef broth instead of water. Perfect au jus.

I love how food in the crock pot makes the whole house smell great for hours.

DH made something like this in the crock pot last week, using BBQ sauce and mango pulp...YUM! Thanks for the recipes!
 
I go to allrecipes.com for many of my crock pot recipes. Love that site! You can create your own recipe box and throw out what doesn't work, keep what does. I almost like it better than the food network site because it usually has ingredients that are easier to find. :)

Here's one I made from Cooking Light:

Milwaukee Sausage and Kraut Supper
1 1/2 lbs. low-fat turkey kielbasa, cut into 3-inch pieces (get all natural, if you can)
3 (10-ounce) cans Bavarian-style sauerkraut, rinsed and drained
3 large Granny Smith apples, peeled, cored, and cut crosswise into rings
1 medium onion, thinly sliced
1 (14 ounce) can fat free low sodium chicken broth
1/2 tsp. caraway seeds
8 medium red potatoes (3 1/2 lbs.) peeled and quartered
1/4 cup shredded swiss cheese

Place half of sausage in an even layer in slow cooker; top with sauerkraut, remaining sausage, apples and onion. Pour broth over mixture; sprinkle with caraway seeds. Cover and cook on high-heat setting for 4 hours.

Place potatoes in a saucepan; cover with water and bring to a boil. Cook 20 minutes or until tender.

Arrange sausage mixture and potatoes on serving plates. Sprinkle with cheese.

I served it with pumpernickel bread-yummy!
 
I copied all the recipes that were posted in this thread. They all look great. Here are my tried and true crockpot recipes.

Smoky tomatillo chicken

10-15 tomatillos,shucked and crudely chopped
1 small onion chopped
2 chipotles in adobe sauce chopped (more or less depending on how spicy you like things)
3 cloves garlic crushed
1/4 c brown sugar
1 1/2 cup chicken broth
2 T dried oregano
4 boneless chicken breasts

Thoroughly mix all ingredients except for the chicken in your slow cooker. Add the chicken and spoon the tomatillo mixture over it. Cover and cook on low for 5-7 hours. Service with warm tortillas or over rice.


[FONT=&quot]Thai Peanut Chicken Slow Cooker

2 1/2 lbs chicken pieces
1 cup hot salsa
1/4 cup peanut butter
1 TB soy sauce
2 TB lime juice
1 tsp ginger
1/2 cup chopped peanuts
2 TB fresh cilantro chopped

Place chicken in crock pot. Mix salsa, peanut butter, lime juice, soy sauce, and ginger. Pour over chicken.

Cover, cook on Low for 8-9 hours, or High 3-4 hours untill done.

To serve pour sauce over chicken, sprinkle with peanuts and cilantro[/FONT]

Pepperoncini Beef


1 (3 pound) beef chuck roast

4 cloves garlic, sliced

1 (16 ounce) jar pepperoncini


Make small cuts in roast, and insert garlic slices in cuts.



Place roast in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat.



Cover, and cook on Low for 6 to 8 hours.


Shred and serve on a roll.
 
Oh my gosh Karin, those two chicken recipes looks fabulous!!!! My crock pot is going to get a workout these next few weeks!!! :p
 
Here's a few tried and true (and GOOD!):

Lasagna Soup
Serves 16 -

1 lb. extra lean ground beef, cooked, rinsed and drained
2 (27 oz.) cans chunky style spaghetti sauce
2 (27 oz.) cans water
1 tsp. beef bouillon crystals
2 chicken bouillon cubes
8 oz. dry lasagna noodles, uncooked and broken into 3" pieces (I used
macaroni elbows cause it looked like MORE)
3 cups frozen Italian mixed vegetables (can use any kind really)
2 (19 oz.) cans red kidney beans
1/2 cup light ricotta cheese

In a large pot, mix together the first 5 ingredients; bring to a
boil. Add
noodles and remaining ingredients, reduce heat and simmer until
noodles are
tender. Stir occasionally to keep ingredients from sticking to the
bottom of
the pot.

CrockPot Method: Add all ingredients EXCEPT noodles. Cook all day on
LOW
heat, add noodles/pasta 15-25 minutes before serving, cover and
continue to
cook until noodles are tender.

Per serving: 220 cal., 2 g fat, 6 g fibre

Santa Fe Rice and Beans
(Smart Ones makeover)

2 cups cooked rice
1 can corn, drained
1 can kidney beans, drained
1 can diced tomatoes (Mexican style)
4 oz. light Velveeta cubed (or ff shredded cheese)

Layer in this order in crockpot on high for approx. 1 hour - until
cheese is melted and heated through.

8 - 1 cup servings


Turkey Stuffed Peppers-Crockpot

Main Meals | This is a recipe for the crockpot or slow cooker. This
can be a meal all on it's own. Maybe adding some additional veggies
or low-point bread to accompany might be a suggestion


Ingredients

3/4 pound cooked ground turkey
14 1/2 oz Diced Tomatoes With Garlic And Onion
1 cup cooked brown rice
5 large green pepper(s)
1 Tbsp garlic herb seasoning
1 Tbsp black pepper
1 Tbsp Italian seasoning
1 small onion(s)


Instructions

Cook rice and set aside to cool. Wash, cut tops off, and de-seed
green peppers. Set aside.
In large bowl, combine turkey (uncooked), cooked rice, onion,
tomatoes and seasonings. Stuff mixture into green peppers.
Spray crockpot with butter spray and also put a few Tbsp. of water in
bottom of pot. Place peppers with tops up in the crockpot.
Cover and cook on LOW for 8-10 hours.

To Die For Roast


1 package of Italian salad dressing mix
1 package of brown gravy mix
1 package of ranch salad dressing mix
2-3 lb beef pot roast
1 cup of beef broth
Any type of veggies

Mix all of the seasoning packet in the cup of broth. Place your veggies on the
bottom of a sprayed crock pot. Then place your meat on top of the veggies and
then pour the broth on top. Cook on low for 9-11 hours.

WW: Chili Mac Pot

16 ounces extra lean ground turkey or beef
1 cup chopped onion
2 cups (one 16 ounce can) tomatoes,
coarsely chopped and un-drained
1 (10 3/4 ounce) can Healthy Request
Tomato Soup
1 cup reduced-sodium tomato juice
2 teaspoons chili seasoning (I used more, 3-5 TABLESPOONS)
6 ounces (one 8 ounce can) red kidney
beans, rinsed and drained
1 cup elbow macaroni

In a large skillet sprayed with olive oil flavored cooking spray, brown
meat. Meanwhile, in a slow cooker container sprayed with cooking spray, combine
onion, un-drained tomatoes, tomato soup, tomato juice, and chili
seasoning. Stir in kidney beans and uncooked macaroni. Add browned meat.
Mix well to combine. Cover and cook on LOW for 6 to 8 hours. Mix well before
serving.

Serves 6 (1 full cup) 4 points
