Does anyone know what "fractionated" means? As in "fractionated palm kernel oil" as listed on protein bar wrappers.
I know "hydrogenated oil" means trans fats and therefore avoid like the plague. I hope fractionated does not mean the same! Anyone? Clare |

Hi Clare,
Fractionated palm oil is palm oil that has been processed to concentrate particular "fractions" of fatty acids, the building blocks of all fats. The process increases the concentration of saturated fats, and makes the oil even worse for you. I think companies use it because it gives the oil longer shelf life or more favorable melting properties or something. I doubt it's as bad as trans fat, but still....yuck! -Kate |
