Default What can I make with a coconut?

I have some fresh coconuts. I don't know what to do with them!

I did drill one to get the juice out and drank it (pretty good) but now don't know what to do with the meat of the coconuts or with the juice of the unopened ones.

Any recipes would be appreciated (fairly quick recipes helpful).

One of the best uses for coconut lies in Indian cuisine. I have a beautiful recipe for coconut/tomatoes and potato dish that my family adores. Whenever I make an Indian meal, several dishes together, this is the dish that is finished first. My husband loves huge bowls of the stuff.

So, I recommend going online or searching books at B&N or your local library for recipes in Indian cooking and select your fancy. My recipe is by Madhur Jaffrey, she's the best.

Drink the milk as you open the coconuts. Use it in all kinds of drinks and sauces. Use the meat by shaving it and dehydrating it for future use, either in the oven or a dehydrator.

When cooking chicken or pork or seafood use the coconut as a crumb and coat it. Then place in oven until done. Very tasty. Put in all kinds of drinks or sauces, even smoothies. Nut butters and coconut is wonderful. Coat a banana and place in freezer for about ten min. Delicious! Snack on it, it fills you up quickly. Very good in jams too. Use your imagination.

Sweet potatoes mashed up with coconut!!! Yum!

Could use a little splenda brown sugar if your potato isn't sweet enough.
