We went apple picking this morning. The orchard had about 40 kinds of trees, I never knew there was so many. We brought back maybe 5 or 6 different kinds. They also had a farm section where you could pick peppers, eggplant, chard, rhubarb, grapes, berries, all sorts of stuff, so that was neat, too. So now I'm looking for apple recipes. Something different. I've got all the usuals, applesauce, pie, crisp, baked apples, dumplings. What do y'all have that's different? Anything savory to balance out all the sweet stuff?

I have a really good recipie for apple stuffed pork chops. Yummy! probably not clean though...
2 inch thick pork loin chops 1/2-1 box stove top pork stuffing (depends on how "stuffed" you like) 1 cup chopped apple 1/2 cup orange juice 1/2 cup "currant" jelly 1/2 cup onion 1 tsp cinnimon Cut your pork chops in half, but don't totally seperate them Mix the stuffing and all ingredients except for a few tbs of orange juice and the 1/2 cup currant jelly. Stuff your chops, they will be overflowing, but that's okay. bake at 325 for 20 minutes Mix the jelly with the juice and heat in the microwave Pour over chops and bake an additional 10 minutes, or until done. Your kitchen will smell devine!! You can also add raisins to the stuffing, but my kids won't eat them that way. Sally |
