My family has been eating this ALL summer long. I found it in the local newspaper. Sometimes I add a can of tuna to my bowl of it for an extra super-duper protein meal!
1 can each black, red and white beans
halved cherry or grape tomatoes (I've also used diced canned in a pinch)
1 bunch chopped scallion
1 small container feta cheese
fresh basil
salt/pepper
5 tbls. olive oil
juice of one lemon or lime
Just mix it all up. It gets better after it's been in the fridge for a while!
