Spaghetti Squash Spaghetti!!

I am loosing weight (30lbs gone 50 to go!!! ) on the medifast program and found this recipe that I now make at LEAST once a week . .. such a great healthy low carb alternative.

1 Spaghetti squash - cut it in have lengthwise and then each half in half. Scoop out the seeds and put face down in a 9x13 pan that has about 2 cups of water with low sodium chicken boulion cubes (2) crumbled throughout.

Bake uncovered at 350 for about 45min to an hour depending on your preference.

Cook up ground turkey with a little italian seasoning and some red wine (any will do) about 4-6 ounces. Once cooked up add in your sauce (I use Dave's Gourmet Red Heirloom organic pasta sauce . . . 45calories,1.5fat,7carbs in 1/2 cup!!!) Add a laughing cow wedge/parm/cheese of your choice.

Pull the squash out with a fork and top on the Meat mixture .. delish! Healthy, and my entire family eats it happily with me. Great texture and very very satisfying.
 
Yummy!! I just discovered spaghetti squash a couple of months ago and i LOVE it! I will def be trying this :D
