Quick Power Meal

I had this for lunch today. Super easy to put together if your in a pinch for time. Reciepe comes from Cindy Whitmarsh Food for Flat Abs.

1/2 cup brown rice (she used a packaged one that microwaves for 90 sec)
3/4 cup of white meat chicken (she used a canned chix)
1/2 can of diced tomatoes (she used a spicy one. I used Rotel)
Half an avacado (cut it up and add to dish)
Dash of Sea Salt.

Put in a bowl and microwve for 3 min. I prefer not to microwave avacado. This was easy and tasty and fast.

Thought I'd pass it along.

BTW I took rest of the rice, chicken, and rotel in a tupperware for tomorrow. Perfect for two servings.
