Default Protein Pancakes-Sweet or Savory

Here is a quickie recipe for protein pancakes.

1 scoop whey protein powder
1/2 cup slow or fast cook oatmeal
2-3 egg whites
dash of cinnamon, vanilla extract and sweetner like Splenda or agave nectar

Mix all together and place in a hot pan, cook for a few minutes each side, and there ya have it. Top with nothing or a little more agave nectar and "I cannot believe its not butter" spray.

You can also make it a more savory pancake and use tuna fish in place of the whey protein, add some salt and pepper and top with a little catsup.-

Default Sounds yummy!

Thanks Tneah! I've been looking for a protein pancake recipe. Question...should the oatmeal be cooked first? If not, is it lumpy when you eat it?

Smile Oatmeal Raisin Cookies

These are from the Clean Eating magazine:

Nonstick cooking spray
1/2 cup oatmeal
1/3 cup plus 2 Tablespoons sucanat (dehydrated can juice)
1 egg white
1/4 teaspoon vanilla
3 tablespoons water
2 cups old-fashioned oatmeal (large flakes)
1/3 cup whole wheat flour
1/4 teaspoon sea salt
1/2 teaspoon baking soda
2/3 cup raisins
1 tsp. cinnamon

Preheat oven to 350. Grease baking sheet with spray (I did not grease my sheets). In a bowl hand mix oil and sucanat. Add egg white, vanilla and water, mix well. Add oats, flour, salt, baking soda, raisins and cinnamon, and mix until just blended to retain texture of the oats. Drop by teaspoonfuls onto baking sheets and bake 10-15 minutes or until bottoms are lightly browned. Sometimes I add a little chopped dark chocolate (70% cocoa)

Protein-1 gram
Fiber-1 gram
Sugars-4 grams

No, do not cook the oats first, that might be really gross! Use them dry, they always turn out yummers.
