Hi Guys,
I have been experimenting to make a cookie like baked product that packs some protein and is healthy for you. This recipe is really easy and very simple to modify. Here is the Banana Chocolate cookie recipe version. 1 cup applesauce 2 Bananas cut in little pieces 1/2 cup of egg whites 1/2 cup of nonfat milk optional add 1/3 cup splenda or other equvalent if you like it sweet 1 3/4 cup oat flour (any whole wheat flour will do too) 3 cups oats 1/2 cup almonds 1 tsp baking soda 2 tsp baking powder 1 tsp salt vanilla as you like it 6 scoops of chocolate whey protein (6 oz) Mix batter until even, then scoop heaping Tablespoons on cookie sheet (use parchment paper so it doesn't stick) bake at 400F for 16 minutes. I got about 40 cookies out of my batch. each cookie has 74 calories, 5 grams of protein, 10 grams of carbs, 1.5 grams of fat and 1.4 g of fiber. The possibilities are endless. I made another batch with chocolate protein powder and added coconut in place of the bananas and skipped the almonds. Vanilla or berry whey protein goes well with 2 cups of fresh berries or dried fruit of any kind. I am also going to make them with chopped apples and pie spice You could also do carrots, rasins and pie spice or anything else that strikes your fancy. If the batter turns out dry, add another eggwhite if it's too wet, add some more flour. I hope you enjoy these!

We really like the chocolate powder banana ones! But the coconut I would do a little less coconut and add some crushed pineapple, maybe use vanilla powder instead of chocolate powder. It was a little dry for my liking, thus I would add fruit.
My husband is so crazy about the cookies he offered to make a whole bunch of different varieties with me for the freezer so he could get rid of the store bought bars that aren't all that great for him who already has high colesterol and triglycerides and diabetes in the family. So I made a list of more ideas: cranberry with orange zest and lemon zest cherry with almonds raspberry with almonds chocolate orange zest with some grand marnier if desired lemon/lime zest with vanilla powder pumpkin spice sweet potato spice with sunflowerseeds zucchini walnut cinammon apple raisin cinammon pear walnut chololate powder I could go on. These are just a lot of fun and they are easy to play with, even if you change things adding more, they still trun out great. I'm going to experiment baking them in a brownie pan to make bars now, and see how that goes...

Cendrine, I didn't get around to making the cookies until today, but I just got finished. I really like them! I put 1/2 cup brown sugar/splenda blend in the batter, and I only had 1/4 cup almonds in the pantry. I burned the first batch, so I baked the next two batches for 10 minutes and they came out great!
Are yours more like a cake-y consistency? That's how mine are...reminds me a bit of banana bread. My chocolate protein powder does not have a strong chocolate taste at all. |

I'm glad you like them, yes they are a little like bananabread... Mine are a bit cakey too, due to the fresh fruit, I think. If you experiment with dry fruit it might become more crunchy, probably also if you flatten them before baking, too. My chocolate protein powder doesn't add as much chocolate flavor as well. But it adds protein, and that I like!
