Talking Oven Fried Chicken

Here's one that sounds delish. I'll try it this weekend and let you know what I think. I love fried chicken. Carmen.

1/2 sleeve (about 20) whole grain salted crackers, pulsed in food processor until fine (about 1/2 cup)

2-1/2 cups corn cereal flakes, pulsed in a food processor to fine (1/2 cup)

2 T sesame seeds

3/4 teaspon cayenne pepper

1/2 tsp garlic powder

2 egg whites

1 cup low fat plain yogurt

1 T Dijon mustard

1/2 teaspoon salt

Olive oil cooking spray

4 medium sized skinless chix breast and 4 skinless chix thighs, rinsed and patted dry.

DIRECTIONS:
Preheat oven 375. Lightly spray a baking sheet with olive oil.

Combine all dry ingredients and spices (except salt) in shallow bowl, reserve.

In a large bowl combine egg whites, yogurt, dijon, and salt. Add chix pieces and coat thoroughly with yogurt mixture.

One at a time dip chix in cracker mixture packing crumbs onto chix. Arrange on the baking sheet and spray lightly with olive oil cooking spray.

Bake for 45-50 min or until juices run clear when chicken is pierced.

Default delicious!

I made this recipe last night. I did substitute wheat flour and wheat germ for the crackers and cereal only because that is what I had on hand but followed the rest of the recipe exactly. Thank you for the recipe it is a keeper and am looking forward to making this again as written.
