Lemony Sweet Potato Salad

3 Sweet Potatoes Roughly 3 lbs
1/4 C Light Mayo
2/3 C Low Fat Buttermilk
Zest of 1 Lemon
1 Tbs Fresh Lemon Juice
3 Celery Stalks - sliced thin
1/4 C Red Onion - minced
!/4 C Fresh Parsley - loosely packed
Salt and Pepper to taste ( I like sea salt)

Bring pot of water to a boil. Peel, and cube sweet potatoes. Boil sweet potatoes for 8-10 mins until tender, but not mushy. Drain, and cool slightly.

While potatoes are cooling, whisk together mayo, buttermilk, lemon juice, and lemon zest. Stir in celery, onion, parsley, salt, and a good dose of black pepper.

Toss potatoes in sauce, and refrigerate until cold.

Makes 8 cups - 12 side dish servings.

130 cals, 2 g fat, 26g carb, 2 g fiber, 2g protein

I just ate a cup of this for lunch today, w/ a side of watermelon. Its too hot today for heavy food, and it filled me up. Yummers!
