Fresh Salsa recipe anyone?

Fresh Salsa

Here's my recipe that I have gotten alot of compliments on.

9 Roma Tomatoes
1 can peeled, diced tomatoes ( I buy Kroger’s Petite)
1 small can diced green chilies
5 green onions (4 with everything and 1 with white only)
5 jalapenos (heat will be determined by the amount of seeds left in these peppers; I usually leave the seeds in only 1 of the 5 peppers)
Salt (will need plenty; however, you can always add more so go easy at first)
Pepper (to taste)
Minced garlic (or fresh if you prefer) about 1 smooth teaspoon
Lowry’s Garlic Salt (to taste)
Cilantro (to taste)-use sparingly again you can always add more
Juice of 1 fresh lime (about 1 tablespoon)

Chop everything up (except lime) and mix it together. When completely mixed, add the juice from the lime and mix thoroughly. Remember don’t use anything metal (no bowl or spoon) the acid in the tomatoes will react with the metal causing a bad flavor.

I normally make it a day in advance to let all the flavors blend. If you have any questions let me know.
 
I went to a tupperware party and the hostess made a fruit salsa it was so good.

1 red delicious apple
2 kiwis
8 fresh strawberries

she made hers in the tuppereware quick chef (which worked great). i make mine in my food processor, (just watch that it doesnt get to liquidy). then serve with some natural cinnamon pita chips. my kids love this nice healthy snack. enjoy....
 
Spicy Black Bean Salsa

2 15oz cans black beans (drained & rinsed)
1 16oz can whole kernel corn (drained)
1 16 oz can diced tomatoes
1 10oz can Rotel mexican festival tomatoes
1/2-3/4 jar of picante sauce (I like Pace-hot)
1/2c chopped red onion
1/2c chopped cilantro
6T fresh lime juice
1 1/2 t cumin
salt & pepper to taste

*recipe called for 2T olive oil but I eliminate it. Sometimes I add diced avocado.

Combine all ingredients and refrigerate 24 hrs fo flavors to meld.

*Not completely "fresh" but very delish;)
