Child-friendly Vegan Recipes

Hi,

I would like to know if anyone has any vegan recipes that their children love.

I need to be getting more veggies into my girls and they are not impressed with salad (oh how I wish they were!). I do make lots of veggie soups and chilis that they like, but I would really like them to start eating some more raw produce.

Thank you so much! I just checked out The Vegan Lunchbox website and there are really good looking recipes. I will have to order the book and get some cookie cutters to make things look more fun for my girls.

I was watching an episode of iCarly and the neighbor made cucumber cups with yogurt and celery- while that doesn't sound so good to me, I love the idea of a cucumber cup.

Cut cucumber in 1/2 lengthwise
Scoop out the seeds. Cut into about 1 inch slices and fill with hummus and diced tomatoes.

I'm gonna try these on my son.

I'll try the cucumber cups too - my little one LOVES hummus with carrots, so maybe I'll be abe to get her to eat the cup too
