Chicken Barley

I made this this past week, it was very good! I love barley!

CHICKEN BARLEY --Points: 5

Serves: 4 (344 Calories 4g Fat 10g Fiber)

4 chicken breast fillets
1 cup chopped onion
1 cup uncooked pearl barley
2 cloves garlic, minced
3 cups reduced-sodium chicken broth
14-1/2 oz canned stewed tomatoes
1/2 tsp salt
1/4 tsp pepper
1/8 tsp dried thyme
1/2 tsp dried rosemary, crushed
1 cup sliced mushrooms

Coat a large nonstick skillet with spray. Place over medium heat until hot. Add chicken; cook 5 minutes, browning on both sides. Remove chicken from skillet, set aside.

Add onion, barley, garlic to skillet and saute 5 minutes. Add broth and all the rest of the ingredients; bring to a boil. Return chicken to skillet. Cover, reduce heat and simmer one hour.
