Whole grain candy cane cookies

Ingredients

3/4 cup coconut oil softened
3/4 cup coconut sugar
1tsp pure peppermint extract
1/2 tsp pure vanilla
I TBS chia seed ground
1/2 cup coconut flour
1/2 cup brown rice flour
1/3 cup unsweetened shredded coconut
1 cup gluten free all purpose flour (I used Bob’s Red mill)
4 eggs

Directions:

Preheat oven to 375

Cream coconut oil and coconut sugar…
Beat in vanilla and peppermint extracts…beet in 1egg
Set aside

In another bowl sift the flours…add the chia seed..then add the unsweetened coconut…mix altogether adding the creamed ingredients next …mixture will seem dry
Beat the remaining 3 eggs, one egg at a time, and add to mixture..

Roll into candy canes or disc shapes…

Bake 11 minuets..

These are sure to give Santa a healthy treat to keep him going all through the night!
