Ingredients
3 Zucchini
1/2 Red Onion, sliced thin
1 yellow or red pepper, sliced thin
1/4 cup red wine vinegar
2 TBL Agave syrup
1 TBL Olive oil
Directions:
Wash and dry the zucchini. Slice the zucchini into slices of medium thickness. Place the zucchini, sliced red onions, and sliced pepper in a bowl with the olive oil. Toss to combine and coat with the olive oil. Place the mixture on a cookie sheet and place in the broiler until vegetable begin to brown and caramelize. Remove from the oven.
Prepare the dressing by placing the red wine vinegar and agave syrup in a bowl. Wisk together.
Place the roasted vegetables in a bowl and toss with the vinaigrette to coat. Serve and enjoy.
