Spinach Tomato Stew

Spinach Tomato Stew by Carol

Ingredients

2 to 4 TBS. of pure virgin olive oil
6 Plump cherry tomatoes chopped
2 Large garlic cloves chopped
1/2 of a large onion sliced
6 Cups of fresh spinach
1 tsp. of Sweet Paprika
1 tsp. of Sea Salt
1 tsp. of Black Pepper
1 TBS. of Tamari Sauce

Directions:

Add olive oil to a saute pan, add chopped garlic and onion. Saute for about 4 or 5 minutes until translucent. Add the tomatoes and stir well. Add all of the dry seasonings, Tamari sauce and stir well. Add the spinach and cook until wilted. You can also add shredded cabbage with this dish.

Can serve over brown rice, pasta. I added it over a nice piece of baked salmon.
