Easy Roast Chicken

Ingredients

– 4 to 5 lb. organic whole chicken (no hormones, antibiotics or steroids), cleaned and legs tied together
– 2 TB turmeric
– 1 tsp curry
– 1/2 tsp dried sage
– 1/2 tsp dried thyme
– 1 TB olive oil
salt & pepper

Directions:

1. Heat oven to 350F.
2. Combine turmeric and curry with olive oil to make a paste and rub over chicken.
3. Place chicken in roasting pan sprayed with cooking spray.
4. Sprinkle with herbs, salt and pepper.
5. Bake, breast down, for 45 min, then turn over and bake for another 35 min or until golden and crispy. (Or, bake breast up for 80 min and use foil to cover if it gets too brown).
6. Let stand for 5 min.

Tip: remove skin and rub over breast meat before serving to get all the flavor without the fat.
