Ingredients
1.5 Tablespoons dark sesame oil
2 tablespoons rice vinegar
2 tablespoons low sodium soy sauce
2 tablespoons water
8 ounces whole wheat pasta (angel hair or spaghetti)
1 large can chunk chicken breast or about 2 cups shredded cooked chicken
1.5 cups chopped red cabbage
1.5 cup chopped green onion
2 tablespoons chopped peanuts (dry roasted or salted)
2 tablespoons chopped cilantro
1 tablespoon brown sugar
Directions:
In a bowl, mix the sesame oil, rice vinegar, soy sauce, water and brown sugar.
Cook spaghetti or angel hair according to package directions and drain.
Mix the cooked pasta with the chicken, green onion, and cabbage. Top with the peanuts and cilantro and toss to coat. Chill for 15 minutes and serve cold.
