Zucchini Pancakes

Ingredients

2 Medium-large sized Zucchinis
1/4 cup of Red Onion
1 Large Egg White – Eggland’s Best
1 Large Egg – Eggland’s Best
1/2 cup of Almond Meal – I used Trader Joe’s
Salt and Pepper
Olive Oil Spray

Directions:

Shred the Zucchini and place in a bowl, add chopped onion. Crack Eggs wisk in separate bowl, add to zucchini mixture. Add Almond Meal and mix. Season with salt and pepper. In medium hot pan spray Olive oil. Spoon in Zucchini mixture in pan- 3 inches in diameter. Flip when bottom gets browned, a few minutes on each side. Makes about 12 pancakes, feed 4.
