Garlic Broccoli with Shrimp

Ingredients

Frozen steam-in-bag broccoli florets
Frozen, cooked and peeled shrimp
2 cloves garlic
1/2 tsp coconut oil
pinch of course sea salt

Directions:

Place one serving of the shrimp (about 9 medium shrimp or 1/3 cup salad-sized shrimp) in a strainer and thaw under cold water. Or put desired amount of shrimp in a resealable baggie and into the fridge the night before so it can thaw.

Place bag of frozen broccoli in the microwave and cook 30 seconds less than the directions on the bag. Depending on the size of the bag, usually 5 minutes will suffice.

While the broccoli is heating, thinly slice the garlic. Melt the coconut oil in a medium-size saute pan over medium heat. Add the garlic and saute gently.

Measure out a cup of the broccoli and add it and the shrimp to the saute pan. Gently toss the broccoli and shrimp to coat with the coconut oil and garlic. Add a pinch of sea salt and serve.

Note: If you are making more than one serving, just increase the coconut oil to one teaspoon, add another clove of garlic, desired amount of shrimp and entire bag of broccoli. I use frozen shrimp and broccoli because I can keep both in my freezer and always have them handy, but feel free to use fresh if you prefer!
