Ingredients
1 Lb of Chicken Breast – sliced in long strips
1 Red and 1 Green Pepper – sliced in long strips
1 Onion Sliced
1/4 Cup of Olive Oil
1 tsp. of Sea Salt
1/2 tsp. of Cracked pepper
1/2 tsp. of Garlic Powder
1/2 tsp. of sweet Paprika
1 Tbs. of minced garlic
1 Tbs. of Balsamic Vinegar
2 to 3 Tbs. of your favorite barbeque sauce
1 pack of Spinach wraps
Brown Rice – you can use a quick cooking rice
Directions:
Slice up chicken breast into long strips, put in a bowl and set aside.
Sprinkle all of your dry seasonings onto the chicken and stir well, add 1 Tbs. of olive oil and 1 tbs. of balsamic vinegar and stir again. Set aside
Coat the bottom of a frying pan with olive oil and add the chicken, and cook until done. Remove chicken from the pan. Wash the pan and add 1 to 2 TBS. of olive oil to pan, minced garlic and add the peppers and onions. If you would like to add more flavor, sprinkle a small amount of the dry seasonings on the veggies. Saute, but keep crunchy.
Stir in the barbeque sauce, add the chicken and stir well. Cook about 2 to 5 minutes
Warm the Wraps in the oven or Microwave
Note* While you are preparing the chicken and the
veggies, cook the brown rice.
Add the rice to the wrap and then top with Chicken and veggies, roll up and enjoy!
