Ingredients
1-1.5 lbs chicken (I use chicken breast to keep it lean)
1 cup frozen corn
1 cup salsa of your choice
1 tblsp chili powder
Juice from 1 lime
Directions:
Layer ingredients in a slow cooker. Cook on HIGH for 4 hours or LOW for 8 hours. Empty the cooked ingredients into a bowl and shred chicken with 2 forks. Mix ingredients and you are ready to use the chicken for tacos, a salad topping, enchilada filling or by itself!
This was so easy and delicious! We used it one night in corn tortillas, one night on a spinach salad, and a third night on homemade pizza. Very versatile, I will definitely make again.
