Ingredients
4 sweet potatoes, unpeeled, cut into rounds, 3/4 inch to 1 inch thick
5 large garlic cloves, minced
3 tbsp olive oil
1 tbsp dried thyme
3/4 tsp kosher salt
1/2 tsp red pepper flakes
Directions:
Preheat oven to 450 degrees. Combine all ingredients in a large bowl and stir, coating rounds with olive oil and other ingredients. Transfer to a large baking sheet and bake in the oven for 25-30 minutes until sweet potatoes are tender and as brown as desired.
This is really garlicky and scrumptious, but if you don’t love garlic, maybe you could reduce the amount used!
