Pumpkin Dessert

Ingredients

15 oz. pure pumpkin
1 1/2 c fat-free cottage cheese
2 eggs
1/2 to 3/4 c sugar
1 TB 100% whole wheat flour
1 tsp pumpkin pie spice
1 tsp vanilla
1/4 tsp salt

Directions:

1. Put cottage cheese in blender and process until smooth.
2. Beat eggs and sugar, combine with cottage cheese.
3. Add remaining ingredients, mix well.
4. Pour into greased 9″ round or 8×8″ square glass dish.
5. Bake 15 minutes at 425F, then 35 minutes at 350F.
6. Let cool at least 15 minutes.
