Pumpkin Chili

Ingredients

1 can (14 oz) black beans, rinsed
1/2 can (8 oz) pureed pumpkin
1 small can (5 oz) tomato sauce, no salt
1 small to medium onion, chopped
1 – 2 green, yellow or red bell peppers, chopped
1/2 cup salsa
1 cup water
1 TB extra virgin olive oil
1 tsp ground cinnamon
1 TB chili powder
1/2 tsp salt
1 to 2 packets of stevia

Directions:

1. Heat olive oil in medium stainless steel pot, add onion and cook for 2 minutes.
2. Add bell pepper, cook at medium heat about 5 minutes, stirring frequently.
3. Add all other ingredients and simmer covered for 30 minutes, stirring every 10 minutes.
(Adjust the cinnamon, chili powder, salt and sweetener based on your personal preference).
