Paleo Gingerbread Cookies

Ingredients

1/2 cup molasses

1/4 cup pure maple syrup

3 tbsp. coconut butter

1 tbsp. coconut milk (I used coconut milk beverage “So Delicious”)

3 cups almond flour (almond meal)

1/4 cup ground flaxseed

1/4 cup coconut flour

1 tsp. cinnamon

1 tsp. ginger

1/2 tsp. cloves

1/2 tsp. salt

1/2 tsp. baking soda

Directions:

Heat oven to 350 F.

In a large bowl, add molasses, maple syrup and coconut butter. Heat in microwave about 30 seconds until coconut butter melts. Stir in coconut milk.

In a separate bowl, measure the almond flour, ground flaxseed, coconut flour, cinnamon, ginger, cloves, salt and baking soda. Mix well.

Add dry ingredients to molasses mixture. Stir well.

Put in fridge for at least 30 minutes.

Roll out half of dough on lightly floured board (I used coconut flour). Cut with cookie cutter and bake on ungreased cookie sheet.

Bake 5 – 7 minutes.

Remove cookies to rack and cool completely. Decorate as desired. (I used melted Lindt 85% Intense Dark Chocolate to decorate).
