8 ozs of cat fish nuggets
3 tablespoons of yellow corn meal
Season with: salt, pepper, onion powder, etc.
Canola cooking spray
Directions:
Preheat the oven to 375 degrees
– While oven is preheating, season fish and coat with the 2 tablespoons of yellow corn meal.
– Spray a small cookie sheet well with cooking spray and place cookie sheet in warmed oven until oil is hot, about 1 – 2 minutes; checking after 1 minute
– Remove cookie sheet and place nuggets on sheet with space in between and not touching; spray the nuggets well with the cooking spray, making sure to spray each piece thoroughly.
– Cook until brown on both sides, turning once; about 15 to 20 minutes… * NOTE: The exact cooking time will vary, depending on the type of oven you are using
