Mediterranean Veggie Flatbread

Ingredients

1 Flat Out Light, or whole wheat pita or tortilla
1/4 C. of your favorite hummus
1/4 quarter of a red onion, thinly sliced
a generous handful of baby spinach
5-6 slices of jarred, roasted red peppers
1-2 TBS reduced-fat feta cheese, crumbled
4-5 kalamata olives (brine-soaked, if possible), sliced

Directions:

Preheat oven to 350 F. Place Flat Out Light directly on oven racks and bake for 8-10 minutes. When you take it out of the oven, it should be hard. Spread hummus on the flatbread, then press red onion into hummus. Pile on the baby spinach. (Be generous, it will shrink during cooking.) Then, place roasted red peppers slices over baby spinach and sprinkle reduced-fat feta over the flat bread. Finally, sprinkle kalamata olive slices on the flat bread.
Bake in oven, directly on the oven rack at 350 F for 8-10 minutes. Sprinkle with cracked black pepper and serve immediately.
