Kale Lentil Soup

Kale Lentil Soup

Ingredients

2-3 inches of turkey Kielbasa chopped into small pieces
one small onion chopped
2 cloves garlic crushed
1 tablespoon olive oil
1 1/2 cups chicken stock, broth, or vegetable stock
1 1/2 cups water
1/2 cup lentils
2 cups chopped Kale
1-1 1/2 tablespoons of Balsamic vinegar

Directions:

In a medium to large pan add 1-2 teaspoons of olive oil and stir in Kielbasa over medium heat until it begins to stick. Remove the Kielbasa with slotted spoon and set aside.

If pan is dry add additional olive oil. If enough oil remains in the pan, add chopped onions and crushed garlic and cook until soft.

Add water
Add stock or broth
Add lentil
Add kielbasa
Cover and simmer over medium heat unitl the lentils are cooked. About 30 minutes.

Add chopped Kale and cook uncovered for about 5 minutes or until Kale softens.

Before serving add a good quality balsamic vinegar.
