Ingredients
2-3 Eggland’s Best eggs
1-2 handfuls fresh spinach
Chopped tomatoes
1 oz cheese
Chopped parsley or cilantro as desired
1 tsp butter or spray
Directions:
Mix eggs with fork. Add butter or spray to a frying pan. Bring to medium heat and add scrambled eggs. As eggs are cooking, take fresh spinach and place in bottom of a bowl or plate. Chop fresh tomatoes and measure out your choice of cheese.
Check eggs and flip when ready. Add salt and pepper for seasoning. When eggs are ready, slide them onto the plate on top of the spinach. Top with cheese, then tomatoes, then herbs. Much easier than making the perfect omelet but all of the delicious ingredients! I also like the different textures and temperature differences in this dish.
This looks delicious, I prefer to skip the cheese and just leave the egg a bit more runny. Thoughts?
