Gluten-Free Strawberry Shortcake

Ingredients

1 3/4 c oat flour
1 t b. powder
1/2 t b. soda
1/2 t salt
1/4 c coconut oil
1 egg
3/4 c plain nonfat Greek yogurt
2 lb. strawberries, sliced
1/2 t liquid stevia

Directions:

Put strawberries and stevia in a plastic bag, seal, and mix around with your fingers. refrigerate until ready to serve (can be made ahead and doubled for other snacks).
Mix oat flour through salt. Cut in coconut oil, will appear “wet”. In a separate bowl mix egg and yogurt, combine with dry ingredients and stir until all is incorporated into a thick batter. Spoon into 8 servings onto parchment lined sheet pan and bake 12-14 minutes.
Top each shortcake with 1/2 c strawberries and 4 T light whipped cream.
