Coconut Lime Watermelon Ice

Ingredients

6 cups watermelon, cubed
1 cup coconut water
1/3 cup organic agave nectar
1/4 cup coconut flakes
2 limes

Directions:

Zest and juice limes, set each aside. You should get approximately 1/4 – 1/3 cup of lime juice and 2 Tbsp lime zest. Place watermelon, coconut water, agave nectar, coconut flakes, lime juice, and 1 Tbsp lime zest into a food processor. Blend all ingredients until watermelon is pureed. Fill ice cube trays with the blended watermelon juice. This recipe usually fills 4 ice trays completely. Freeze for 3 hrs until frozen. Place frozen cubes into a high powered blender, I use a Ninja, and blend on high until the cubes are sufficiently crushed. Makes approximately 12 cups of shaved ice. Garnish with a dollop of whipped cream and lime zest (optional and not included in the nutritional information below). Serves 6, whopping 2 cups portions!

  • I work for a couple of Chiropractors and made this for our staff meeting. It was a HUGE hit! Everyone loved the citrus and coconut flavors blended with the watermelon. Of course they all loved that it was MUCH healthier than the Frappuccinos we see around the meeting table 😉
