Chicken, black bean, corn, and brown rice lettuce wraps

Ingredients

1 cup cooked brown rice, cooled completely
1 15 oz can black beans, drained and washed
1 red bell pepper, diced
4 green onions (tops and stems), finely sliced
1 bunch cilantro, chopped
4 tomatoes, seeds removed and diced
3 cups fresh corn, cut from the cob
5 cups white meat chicken, shredded
2 avocados, cubed
1/2 cup lime juice (or more, to taste)
2 tsp cumin (or more)
2 cloves garlic, chopped
salt and pepper, to taste
several whole lettuce leaves (your favorite), washed and dried

Directions:

Cook brown rice according to directions on package and cool completely. In a large mixing bowl (at least 12 cup capacity), put the rice, black beans, red bell pepper, green onions, cilantro, tomatoes, corn, shredded chicken, and avocados. In a separate bowl, mix the lime juice, cumin, garlic, salt, and pepper. Pour over the salad ingredients and mix thoroughly. Add more seasonings, if needed. Chill in the refrigerator for an hour or more to allow flavors to mingle. To serve, take 2 or 3 tablespoons of salad and wrap in lettuce. Enjoy!

  • I made this for lunch today and it tasted great! I didn’t have chicken to add, but I did throw in a jalapeno pepper for some extra heat. YUMMY!

  • This was my recipe…thanks for the positive comment, Lisa! I thought that a jalapeno would taste awesome in it, but I didn’t add that to the recipe. I figured that if people liked jalapenos, they would change the recipe to their liking. You know what else is good? A dash of chipotle powder…yum!
