Blueberry Oatmeal Bran Muffins/w Flaxseed

Ingredients

¾ cup oats
1 ¼ c. whole wheat flour + 2 tbsp.
¾ cup Splenda
¾ cup Oat Bran
4 tbsp. Flaxseed Meal
4 tbsp Wheat Germ
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
¾ tsp. salt
1 2/3 c. buttermilk
1 jar. baby carrots or apple sauce
2 tsp. lemon rind
3 Egg whites
2 c. blueberries

Directions:

Preheat oven to 400°.

Add together all dry ingredients in a medium bowl. Add together all wet ingredients in a large bowl. Combine both.

Mix 2 tbsp. of flour with the blueberries and add to the mixture.

Spray muffin pan with non-stick spray and spoon the blueberry mixture into the cups. Bake for 20 minutes.
