Baked Salmon with Vegetables

Ingredients

1 lb salmon, cut into 4 pieces
1/2 c fat-free sour cream
2 TB lemon juice
2 TB sweet hot mustard
2 tsp dried dill
1 1/2 tsp curry powder
1/2 tsp garlic salt
1/2 tsp garlic powder
1/2 tsp red pepper flakes
4 c vegetables, cut into bite-size pieces (such as zucchini, carrots, cherry tomatoes, yellow squash, bell pepper, green onion)
aluminum foil

Directions:

– preheat oven to 400’F
– combine sour cream, lemon juice, mustard, and dill
– cut foil into 4 big squares (large enough to hold 1 cup of vegetables and 1 piece of salmon)
– place 1 piece of salmon skin side down in each square
– arrange 1 cup of vegetables around salmon
– sprinkle with garlic salt, garlic powder, curry powder and pepper
– spread 2 to 3 TB of sauce over each piece of salmon
– close packets and place in baking dish
– bake approx. 30 minutes
– open foil packets and broil for an additional 2 – 3 minutes if desired
