Easy Taco Salad

Ingredients

3/4 pound lean ground beef, bean and tomato mixture (see my Tex-Mex Stuffed Bell Peppers receipe on how to prepare)
Romaine lettuce
Shredded purple cabbage
Baked Tortilla chips
Fat free cheddar cheese
Chopped cilantro
Fat free Green salsa verde (optional)

Directions:

1. Tear romaine lettuce and put several pieces in two serving bowls.
2. Chop a few pieces of purple cabbage and add in with the lettuce.
3. Chop cilantro and set aside.
4. Heat beef/bean/tomato mixture in microwave for about 3-4 minutes and divide mixture between two bowls (this will easily serve two!)
5. Add in a few crushed tortilla chips, cilantro and fat free cheese.
6. Top with green salsa if desired.
