Ingredients
4 c cauliflower, cut into 1″ pieces
1 1/2 c non-fat milk
1/4 tsp salt
1/2 c whole wheat bread crumbs
3/4 c sharp cheddar, shredded
1 tsp extra virgin olive oil
2 TB whole wheat flour
1/4 tsp pepper
1 TB green onions, chopped
1 tsp dijon mustard
Directions:
1. Combine 1 1/4 c milk and cauliflower, bring to a boil, then simmer covered for 5 min, sprinkle with salt and pepper.
2. Mix flour and 1/4 c cold milk until smooth, add mustard and cheese, cook until melted and thickened.
3. Add onion and combine with cauliflower, top with crumbs, and drizzle with olive oil.
4. Bake at 350F for 20 min, then broil for 1 – 2 min or until browned.
