Almond Flour Brownies

Ingredients

3/4 cup almond flour
1/4 tsp salt
2 Tbsp unsweetened cocoa powder
1/2 tsp banking powder
3/4 cup coconut sugar
3 large eggs ( I used egglands best )
1 tsp pure vanilla
1/2 cup coconut oil
3/4 cup semi sweet chocolate chips or cacao nibs, divided into 1/2 cup and 1/4 cup portions

Directions:

Preheat oven to 350 degrees and grease a 8×8 pan with cooking spray or coconut oil. Mix together first 4 ingredients in medium size bowl and set aside.
Next in a double boiler or put a bowl over a pan with simmering hot water melt 1/2 cup cacao nibs/ chocolate chips and coconut oil. In another bowl beat eggs, vanilla, and coconut sugar. Once chocolate is melted add slowly to egg mixture, whisking as you go. Next combine chocolate mixture with dry ingredients and mix completely together.
Pour batter into prepared pan and sprinkle with remaining 1/4 cup cacao nibs.
Bake 30 min and allow to cool before cutting.

  • This is soooooo “yummy” it definitely satisfies that chocolate craving! Almond flour is so versatile and so nice to use in baked goods! Organic cacao is packed with nutrition and antioxidants! And coconut sugar has such a different taste then regular and does not spike your blood sugar like regular sugar…
