Fruit omelet/Pancake

Ingredients

I granny smith apple, peeled, cored and sliced.
1/2 to 1 cup frozen blueberries. (or combination of fresh berries)
1 to 1 1/2 scoops whey protein powder (vanilla or unflavored – no sweetener)
1/2 tsp. cinnamon or to taste (I also use nutmeg)
1/4 c milk
1 Tbsp vanilla extract
1 cup cooked oatmeal
1 or 2 whole eggs
4 egg whites
You can use whatever combination of fruit and spices interest you. Cooking times may vary depending on fruit used and size of cooking vessel.

Directions:

Preheat oven to 400.
Spray dish with nonstick spray. Layer dish with the apple slices. Layer with frozen blueberries.Whisk together protein powder and spice. Add milk and vanilla and mix well. Add cooked oatmeal and mix well. Add eggs. Mix well. Pour batter over the fruit. Bake for 35-40 minutes. Serve hot or cold. Garnish with fresh orange slices and toasted almonds.

I have adjusted ingredients several times and it always comes out great. Use whatever fruit you like. I use a 1& 1/2 quart casserole dish and get 4 or 5 sevings.

  • What could I use as a substitute for the protein powder? I don’t want to buy that just for this recipe.
