Colorful Salad with an Orange Twist – Easy!

Ingredients

3 cups of spinach
1 1/2 cups diced butternut squash (you can buy it pre-cut)
1 cup pure orange juice
3 large strawberries

Directions:

Put the diced squash in a microwave safe dish with the orange juice. Cook on about 4 minutes or until the squash is soft.
While squash is cooking, dice strawberries and add to spinach in a medium sized bowl.
When squash is ready, drain the remaining orange juice.
Add squash to salad. Mix it up, if so desired! Add cinnamon for an extra yummy taste.
Enjoy.
