Ingredients
6 Cups Grated Squash
1 Cup Biscuit Mix (like Bisquick)
3/4 Cup Grated Parmesan Cheese
1-1/2 Cups Egg Beaters egg substitute in place of 6 beaten Eggs
Salt & Pepper to your liking
Directions:
Preheat oven to 400 degrees. Wash squash (about 2 small to medium squash). Do not peel. Cut off ends and grate squash to equal approximately 6 cups. Mix in the rest of the ingredients and pour into a 9-1/2 X 11 glass pan that has been sprayed with cooking spray. Place in 400 degree oven for 30 – 40 minutes, until browned on top and toothpick stuck in the middle comes out clean. Cut into 8 squares to serve as a side dish, or 16 to serve as an appetizer.
(This was a family recipe that I converted to something healthier last year and it worked. My family typically called these Zucchini Pancakes and mixed the batter up with the eggs and fried in butter as you would a pancake. I needed a different option and decided to change to egg substitute and bake in non-fat cooking spray in the oven. It also takes less prep time to mix and put them in the oven versus standing over a stove and frying up individual pancakes. I like them even better this way!)
