Tofu and Black Bean Tacos

Ingredients

1/2 onion, sliced
1 14 oz package firm tofu, drained
1 tbs oil
3 cloves garlic, minced
1 tsp chili powder
1/2 tsp oregano
1/2 tsp coriander
1/2 tsp cumin
juice and zest of 1 lime
1 (15 oz) can black beans, rinsed and drained
6 large whole grain tortillas
lettuce, tomato, cheese for garnish (optional)

Directions:

1. Combine tofu, spices, and lime in a bowl; mix and mash well.
2. Heat oil in skillet over medium-high heat. Add garlic and onion and cook 2-3 minutes.
3. Add tofu mixture and cook, stirring occasionally, for 5 minutes.
4. Add beans and heat through for another 2 minutes.
5. Serve on top of tortillas with lettuce, tomato, and cheese if desired.
