Healthy Whole Grain Waffles

Ingredients

2 Eggland’s Best Eggs, beaten
1 3/4 cups skim milk
1/2 cup unsweetened applesauce (or 1/4 cup applesauce, 1/4 cup canola oil)
1 teaspoon vanilla extract
1 cup whole wheat flour
1/4 cup all-purpose flour
1/2 cup flax seed meal (or 1/4 – 1/2 cup oatmeal)
1/4 cup wheat germ
4 teaspoons baking powder
2 Tablespoons brown sugar
1/4 teaspoon salt

Directions:

1) Whisk eggs, milk, applesauce and vanilla. Beat in flour, flax seed meal, wheat germ, baking powder, sugar and salt.

2) Preheat waffle iron. Spray with cooking spray (especially important if you used all applesauce and no canola oil) and cook in batches to desired doneness.

Note: Freezes well! Reheat in toaster.
