Amanda's South of The Border Chicken Tortilla Soup

Ingredients

1 tbs olive oil
1 cup chopped yellow onion
1 tsp bottled minced garlic
2 tbs fajita seasoning (I use Bolner’s Fiesta Salt Free Fajita Seasoning)
2 & 1/4 cups water
1 can pinton beans, drained and rinsed
1 can fat free low sodium chicken broth
1 can diced tomatoes with green chiles (you can go mild, medium or hot as fire!)
1 whole wheat tortilla cut into strips
1 can chunk chicken breast
1 large sliced avocado

Directions:

1. Heat olive oil in a large soup pot over medium-high heat.
2. Add onion and garlic and saute for about 3 minutes.
3. Add fajita seasoning and cook for 1 minute.
4. Stir in water, pinto beans, tomatoes with chiles, broth, and can of chicken.
5. Bring to a boil, reduce heat and simmer 10 minutes.
6. Top each serving with a few of the tortilla strips and a slice or two of avocado.
