Amanda’s Lighter King Ranch Chicken Casserole

Ingredients

1 can Campbell’s Healthy Request Cream of mushroom soup (or similar brand)
1 can Campbell’s Healthy Request Cream of chicken soup (or similar brand)
1 can tomatoes with green chile peppers (you can use Rotel and make it hot!)
10 whole wheat tortillas cut into triangles
1 small chopped onion
1 3-3.5 pound whole chicken, boiled, keep 1 cup broth
1 bag Kraft fat free cheddar cheese

Directions:

1. Boil chicken for about 30 minutes, set aside one cup of broth.
2. Preheat oven to 350 degrees.
3. Mix soups, tomatoes w/ chile peppers, and broth in small sauce pan and heat on low.
4. Spray a glass Pyrex casserole dish with Pam.
5. Shred chicken into small pieces and layer the chicken, tortilla triangles, cheese, onion, and soups. Keep repeating the layers.
6. Bake uncovered at 350 degrees for 15-20 minutes.
