Crustless Asparagus Quiche

Ingredients

Asparagus, fresh, 15 spear,cooked and cut in pieces
Mushrooms, fresh, 5 medium , sliced
Onions, raw, 0.5 medium , chopped
Garlic, 1 clove , minced
Egg substitute, liquid ( like Egg Beaters), 0.75 cup
2 Egg Whites
1/2 C Skim Milk
Reduced Fat Mexican Shredded Cheese, 1 cup
1 Raw Tomato (Medium, whole), sliced

Directions:

Sautee onion , garlic and mushrooms.

Mix milk, egg beaters and egg whites.
Mix with veggies, pour in Pam sprayed 9 in pie plate. Sprinkle on cheese. Place sliced tomato on top.

Bake in 350 oven for 30-40 minutes, until done.
