Veggie Baked Ziti

Veggie Baked Ziti

Ingredients

1 Italian turkey sausage removed from its casing
1.5 cups broccoli slaw (I like the Eat Smart brand)
1/2 cup spaghetti sauce
4 oz. fat free cottage cheese
2 tablespoons low fat shredded mozzarella cheese
1 tablespoon Parmesan cheese

Directions:

Preheat oven to 350 degrees.

Set a 1 quart pot of water to boil. While waiting for the water to boil, start heating a small frying pan to cook the turkey sausage. Break up the meat as it cooks. Add the broccoli slaw to the boiling water, add salt if desired. Boil for 10 minutes, until quite soft. Drain veggies well.

In a two-cup, shallow, oven-proof pan, spread 1/4 cup of the spaghetti sauce. Take one half of the veggies and spread over the sauce. Evenly spread cottage cheese over them and sprinkle with sausage crumbles and then mozzarella. Cover with the remaining veggies. Spread remaining sauce, covering them evenly. Sprinkle with Parmesan cheese.

Bake at 350 for 15 minutes

  • This recipe sounds very good. Thank You for submitting it. I am going to try it this week.

  • I made this for dinner tonight. I cannot tell you how delicious it was. My husband said it was 5 out of 5 stars. I will definitely be making it again. I believe this is a one person portion so I increased the ingredients and the larger amount needs to be cooked at least 30 minutes. This recipe is well worth trying.

  • I’m also confused about the ziti. Shredded broccoli might substitute for spaghetti, but ziti is a thick, hollow pasta.
