Ingredients
1 Tablespoon of cumin
1/2 cup of Quinoa
14.5 oz of low sodium chicken broth
3 bell peppers
1lb 95% lean ground beef
1/2 of a 15.5oz can of garbanzo beans, drained
1/2 sweet onion chopped in small pieces
10 oz bag of frozen spinach thawed and squeezed dry
1/3 cup of crumbled feta cheese
2 tablespoons of vegetable or olive oil
1/2 teaspoon of dried oregano
1/2 teaspoon of salt
Directions:
1. rinse Quinoa in a bowl of luke warm water
2. add chicken broth to saucepan boil, then add quinoa with 1 tablespoon of cumin and letter simmer for 15 minutes. Fluff quinoa with fork
3. preheat oven to 350 degrees
4. mix beef, quinoa, spinach, feta cheese, garbanzo beans, salt, and oregano until thoroughly combined.
5. slice peppers in half remove seeds and ribs and arrange cut side up in a 9 X 13 baking dish. divide beef mixture into peppers
6. cover with foil and bake 30 minutes. then uncover and cook 25 minutes longer.
optional: serve with mix greens
